Rose Pistachio Ice Cream

Rose ice cream traces its origin back to primarily Iran, with famous desserts such as Bastani originating in 400 B.C.! England, however, has also made rose ice cream since the 1600’s. Ice cream was made by gathering ice from the lakes and rose water was made by boiling down the fresh rose petals from your garden at the end of the rose season. Back in the day, rose water would be the common flavor and vanilla would be considered exotic. 

Now, people find rosewater quite “exotic” while vanilla as “plain”.

Ingredients

  • 250 ml (1 cup) milk
  • 250 ml (1 cup) heavy cream
  • 5 egg yolks
  • 125 g (½ cup) sugar
  • 4 tbsp rose water
  • Chopped pistachios
  • Optional: red food coloring
  • Optional: ¼ cup dried roses or 1 cup fresh roses

Instructions

  1. Add milk and cream to pot along with the dried roses and stir until it steams.
  2. Meanwhile, add sugar to the egg yolks and whisk until light and fluffy.
  3. When the milk and rose mixture steams, turn it off and pour it through a sieve.
  4. Slowly pour the hot cream and milk mixture into the egg mixture to temper it.
  5. Meanwhile, prepare a bowl with ice.
  6. Put the mixture back to the heat and whisk until it reaches 83ºC, when it reaches a nappé consistency.
  7. Pour the mixture through a sieve to remove any lumps.
  8. Place the bowl into an ice bath to cool the ice cream mixture quickly.
  9. Add 2-4 tbsp rose water, according to the strength of flavor that your prefer.
  10. Add food coloring until you reach the color of your choice.
  11. Cover the ice cream mixture with plastic. Allow the plastic to touch the mixture to avoid forming a skin.
  12. Place in the fridge to age and develop flavor, from 4-12 hours.
  13. After it finishes aging, it’s time to create the ice cream: chop pistachios.
  14. Pour the ice cream mixture into an ice cream machine and follow the instructions.
  15. Serve in a bowl or with a waffle cone.
