This Rolled Apple and Cinnamon French Toast is a delightful twist on classic French toast, featuring apple-filled, buttered bread slices rolled up and fried to golden perfection. Each roll is dipped in a sweet cinnamon sugar mixture, creating a crispy, flavorful coating. Serve with a creamy vanilla crème fraîche dip for a perfect balance of sweet and tangy flavors.

Ingredients

  • 2 apples
  • 10 slices of toast
  • ½ tbsp ground cinnamon
  • 1 tsp lemon juice
  • 60 g brown sugar
  • 2 eggs
  • 50 ml milk
  • 100 g butter
  • 100 g crème fraîche
  • ¼ tsp vanilla (I used vanilla bean paste)
  • Ground cinnamon (for serving, optional)

Instructions

Prepare the apple filling:
  1. Peel and dice the apples.
  2. In a pan, cook the apples with 1 tsp of lemon juice for 5 minutes under tender. If the apples are on the sour side, add 1 tbsp of brown sugar instead of lemon juice.
Prepare the bread:
  1. If using sandwich bread with crusts, cut off the crusts.
  2. Use a rolling pin to flatten each slice of bread.
Assemble the rolls:
  1. Spread a thin layer of butter on one side of the bread.
  2. Place half a tablespoon of the apple filling on the buttered side and roll it up tightly.
Prepare the egg mixture and cinnamon sugar:
  1. In a bowl, combine the eggs and milk.
  2. In another bowl, combine the brown sugar and ground cinnamon.
Cook the rolls:
  1. Dip each rolled toast into the egg and milk mixture.
  2. In a pan over medium heat, melt the remaining butter.
  3. Fry the rolled toasts on all sides until golden brown.
  4. After frying, immediately dip the rolled toasts into the cinnamon sugar mixture.
Prepare the Crème Fraîche Dip:
  1. In a small bowl, combine the crème fraîche and vanilla bean paste.
  2. Serve the rolled French toast warm with the crème fraîche dip on the side.
  3. Optionally, sprinkle with additional ground cinnamon before serving.

Notes

Apple filling: Adjust the sweetness of the apple filling according to your taste. If the apples are too tart, add a bit more brown sugar.


Cooking: Ensure the pan is not too hot to prevent the butter from burning. Fry the rolls on medium heat to achieve an even golden brown color.


Serving: These rolls are best served immediately while they are warm and crispy.
