Watermelon Salad
FUN FACT: The first recorded watermelon harvest occurred nearly 5,000 years ago in Egypt and is depicted in Egyptian hieroglyphics on the walls of their ancient buildings!
This watermelon salad isn’t the typical feta and watermelon combo (even though it’s a delicious combo nonetheless!). This is my own personal twist on a refreshing watermelon salad that you can enjoy during the hot months of the summer!
I didn’t include exact measurements in the recipe as this can be altered in any way you please. You can add the amount you want according to your desire. The dressing is accommodating to a large amount!
Watermelon Salad
Ingredients
- 1 watermelon
- Baby spinach
- Grilled peaches
- Cucumbers
- Red onions
- Walnuts
- Bocconcini
- Pumpkin seeds
- Mint
- Basil
- 3 garlic cloves
- 1 tbsp whole grain mustard (or Dijon mustard)
- ¼ cup honey
- ¼ cup balsamic vinegar
- ½ juice of a lemon
- ⅓ cup olive oil
- Lemon zest
- Thyme leaves
- Salt, to taste
Instructions
- Mince the garlic, combine the mustard along with the honey, balsamic vinegar, lemon juice, lemon zest, thyme, and salt.
- Slowly emulsify and whisk the olive oil into the vinaigrette.
- Set aside.
- Toss baby spinach, grilled peaches, watermelon slices/cubes, cucumbers, red onions, walnuts, bocconcini, pumpkin seeds, mint and basil with the balsamic vinaigrette.
