Apple Crumble Muffins
Ingredients:

Muffins:
120 ml (½ cup) milk
1 egg
80 ml (⅓ cup) vegetable oil
1 teaspoon vanilla
160 g (1¼ cup) flour
100 g (½ cup) sugar
2 teaspoons baking powder
¼ teaspoon salt
2-3 apples
1 teaspoon nutmeg
1 teaspoon cinnamon
The crumble:
65 g (½ cup) flour
100 g (½ cup) brown sugar
1 teaspoon cinnamon
60 (¼ cup) cold butter
Directions:
Muffins:
To a bowl, whisk milk, egg, oil, and vanilla.
In a separate bowl, sift flour, sugar, baking powder, nutmeg, cinnamon, and salt.
Dice or shred 2 apples.
Mix apples into the flour mixture.
Stir the wet ingredients into the dry ingredients.
Make crumble:
Mix flour, brown sugar, cinnamon, and cold butter.
Use your hands to combine it all together.
Baking:
Preheat oven to 350ºF (175ºC).
In a muffin baking tray, fill the muffin cups with the muffin mixture and top with the crumble.
Bake for 12-15 minutes, until a toothpick comes out clear.
