Apple Crumble Muffins

Ingredients:

Servings: a dozen 

Calories per serving: 218

Muffins:

  • 120 ml (½ cup) milk

  • 1 egg 

  • 80 ml (⅓ cup) vegetable oil

  • 1 teaspoon vanilla

  • 160 g (1¼ cup) flour

  • 100 g (½ cup) sugar

  • 2 teaspoons baking powder

  • ¼ teaspoon salt

  • 2-3 apples

  • 1 teaspoon nutmeg

  • 1 teaspoon cinnamon

    The crumble:

  • 65 g (½ cup) flour

  • 100 g (½ cup) brown sugar

  • 1 teaspoon cinnamon

  • 60 (¼ cup) cold butter

Directions:

Muffins:

  1. To a bowl, whisk milk, egg, oil, and vanilla.

  2. In a separate bowl, sift flour, sugar, baking powder, nutmeg, cinnamon, and salt.

  3. Dice or shred 2 apples.

  4. Mix apples into the flour mixture.

  5. Stir the wet ingredients into the dry ingredients.

    Make crumble:

  6. Mix flour, brown sugar, cinnamon, and cold butter.

  7. Use your hands to combine it all together.

    Baking:

  8. Preheat oven to 350ºF (175ºC).

  9. In a muffin baking tray, fill the muffin cups with the muffin mixture and top with the crumble.

  10. Bake for 12-15 minutes, until a toothpick comes out clear.
