Cookie Butter Chocolate Blondies
These chocolate blondies are chewy, fudge, chocolate-y, melt-in-your-mouth heavenly. They taste as if a chocolate chip cookie and a brownie got married and gave birth to a wonderful blondies child.
A chocolate-y child that will be devoured and live happily ever after in your belly.
ingredients:
1 cup all-purpose flour
½ tsp baking powder
¼ tsp baking soda
½ tsp salt
⅓ cup unsalted butter, melted
1 cup brown sugar
1 large egg
1 egg yolk
1 tsp vanilla extract
½ cup cookie butter
Chocolate chunks, chopped
Lotus Biscoff biscuits, crushed
Directions:
Preheat oven to 350ºF (177ºC).
Sift dry ingredients – flour, baking powder, baking soda, and salt.
Melt butter.
Add brown sugar into the melted butter.
Add 1 teaspoon of vanilla extract.
Combine cookie butter into the butter and sugar mixture off the heat and mix well.
Chop chocolate chunks according to your liking – I used 2 dark chocolate bars.
Crush Lotus biscuits with your hands according to your liking – I used 9 cookies.
Into the cooled cookie butter mixture, add 1 whole egg and 1 egg yolk.
Add wet ingredients to dry ingredients.
Stop mixing as soon as the dry ingredients are fully incorporated.
Add the chopped chocolate chunks and Lotus biscuits.
Line a baking tray with parchment paper and spread the mixture evenly.
Bake for 20-25 minutes.
The blondies will come out soft from the oven and will set when cooled.
Slice into equal squares.
