Vanilla Swiss Roll

Hello beautiful people! 

I baked a super fluffy, creamy, and delicious Vanilla Swiss Roll and I thought I’d share it with all of you! 

It’s filled with a mascarpone cream filling and topping with fresh berries!

It’s an easy recipe with ingredients you already have in your kitchen, and it’s very customizable! You can add whatever filling you want inside (jam, whipped cream, melted chocolate, fruits, etc...) any topping or no topping at all, or even make it a chocolate cake instead of vanilla! 

Ingredients:

Serves: 10

Calories per serving: 340

The cake: 

  • 5 egg yolks 

  • 70 g (⅓ cup + 1 tbsp) oil

  • 60 g (¼ cup) milk 

  • 90 g (½ cup + 2 tbsp) pastry flour 

  • 10 ml (2 tsp) vanilla extract 

  • 5 egg whites 

  • 1 tsp cream of tartar 

  • 55 g (¼ cup) sugar  

Filling:

  • 454 g (2 cups) whipping cream

  • 250 g (1 cup) mascarpone cheese 

  • 30 g (¼ cup) powdered sugar

  • 1 tsp vanilla extract

Topping: fresh berries 

Directions:

  1. Preheat your oven to 320°F (160°C).

  2. Line your tray with a parchment paper

  3. Whisk 5 egg yolks, oil, milk, and pastry flour together

  4. Add vanilla extract

  5. Make a meringue by whisking 5 egg whites and 1 tsp cream of tartar (it could be 1 tsp lemon or vinegar or nothing - this is to stabilize the meringue) and slowly add the sugar as it’s whisking until you reach stiff peaks (when you flip the bowl upside down, it doesn’t move and stays put)

  6. Slowly fold the meringue into the egg yolk, oil, milk, and flour mixture. We don’t want to remove the air from it so be patient and fold slowly until they’re fully incorporated!

  7. Add your batter in a tray, making sure you try your best to maintain the air inside. So don’t bang your tray on the table!

  8. Bake until a toothpick comes out clean. It could be 10-15 minutes but keep checking because we don’t want it to overbake otherwise it will crack when we roll it

  9. Once it’s done baking, wait for it to become warm to the touch (not too hot), so about 5 minutes. Get a parchment paper and slowly roll it while it’s warm and put it in the fridge to completely cool.

  10. Now it’s time for the filling!

  11. Whisk the cold whipping cream, powdered sugar, and vanilla until they become fluffy and stiff, whisk in the mascarpone until they’re all incorporated.

  12. If you don’t have mascarpone, you can substitute it with cream cheese

  13. Combine everything together by filling the cake with your filling, rolling it, and you’re done!
