Feta Cheese and Herb Bread Rolls
Nothing screams Ramadan to me like dough. Fried, baked, stuffed, savory, sweet, you name it. They’re the perfect compliment to have next to a bowl of soup, and the best thing to eat after you break your fast after that first date.
The combination of feta cheese with parsley and mint is heavenly.
The bread is fluffy – you bite into a pillow and you’re met with the tangy flavor of the feta cheese mixed with the freshness of the fresh mint and parsley.

Ingredients:
Servings: 12-16

2 ½ cup (375 g) flour
2 tsp yeast
1 tsp salt
1 tsp sugar
3 tbsp (45 ml) milk
¼ cup (60 ml) olive oil
1 cup (250 ml) warm water
Filling:1 cup (200 g) feta cheese
Fresh mint, chopped
Parsley, chopped
Rosemary, finely chopped
1 egg
Herb quantity according to your liking
Directions:
In a stand mixer with a dough hook – add flour, salt, sugar, and yeast.
Add milk, olive oil, and warm water.
Knead until a smooth dough ball forms – about 5 minutes.
Oil a bowl and proof dough until it doubles in size – about an hour or two.
In the meantime, prepare filling by combining feta cheese, egg, parsley, rosemary, and mint.
After dough is proofed, divide it in half.
Roll the dough into a thin sheet and fill it with ½ of the filling.
Roll the dough into itself and divide it with a knife into 6-8 rolls.
Brush it with olive oil and bake for 12-15 minutes at 400ºF (200ºC).
